Pink Ruffle Cake

We have had a couple of crazy months around here, and as per usual when things get hectic, I never seem to update my blog.  I have been baking and doing some fun things here and there though.  I have even remembered to take pictures, {most of the time}.

I figured that it was time to post something new here so that when I click on my blog page, I don't just see the lemon blueberry loaf.  I guess part of me was thinking that it would magically update itself, but no such luck!

So here is one of my favorite cakes that I recently made.  My niece Lauren, (the same one I made the pink rose cake for last year}, turned 16 a couple of weeks ago and her mom asked me to make her cake again this year.  I went back and forth with what I wanted to do, but I landed on a pink ruffle cake.  Ruffle cakes are so easy to make and quick to decorate - and the best part is that they look so pretty without having to put a ton of effort into it.  Here is my final result:


It is actually 2 separate cakes.  The top tier is a 6 inch layered cake.  I made a white cake and filled it with my favorite chocolate mousse.  I used white buttercream and about a bazillion clear sugar sprinkles to decorate it. 
The bottom tier is a 3 layer cake {also white with chocolate mousse filling}, and I tinted the frosting the softest shade of pink to make the ruffles.  I had to use lollipop sticks as dowels in the bottom tier to hold up the top tier that was stacked on a cake board.  I just ruffled around the bottom of the top tier to bring them together and my sister-in-law and I stuck a couple of daisies in the side for some extra decoration because I felt like it was missing something. She had bought a "L" monogram for the top that I thought finished it off nicely and it went well with the sparkly sprinkles too! 

 
Here is a picture of the inside of the bottom tier.  I think this was the best tasting cake I've made to date.  The cake was light and fluffy, the icing had good flavor and consistency and you can never go wrong with the Our Best Bites chocolate mousse.  It's that good!  I was SO happy that everyone seemed to enjoy it as much as I did.  I always get nervous when I bake for people I don't know, like Lauren's guests at her party.

I really wish that I would have taken more pictures of the party set up.  Her mom did a great job of putting together a dessert table and a hot chocolate bar, and everything came together perfectly.  We also had a photo booth and the guests had tons of fun playing Just Dance on the Wii. Here is the best picture I was able to take before the kids dug into the treats.
